Our Meat Range

Only the top-quality and locally sourced meat will be used for your special event. This ensures good provenance and regular supply for either roasts or barbecues. We provide pork, beef, lamb, venison, other meats and some exotic meats. On certain meats and on request, we will source the cuts from Lakes Speciality Food. This is because they deliver dried-aged meats from their Himalayan Salt Chambers.

PORK

We locally source our top-quality British pork. This ensures good provenance and regular supply. We also cater for traditional breeds such as Gloucester Old Spot, saddleback and middle whites ( by request); this is subject to availability.

Apart from the full hog experience we can also provide other cuts of pork such as loin, leg and shoulder.

BEEF

We serve high quality British beef that is matured to perfection. We can also deliver beef from traditional breeds such as Aberdeen Angus, Hereford, Dexter and belted Galloway etc. These breeds are subject to availability.

We can provide cuts suitable for every occasion such as roasting or barbecuing.

LAMB

We only use the best British lamb that is sourced locally, and the South Lakeland is probably one of the best places in the world to do this. In the UK there are around 90 different breeds of sheep, this is more than in any other country in the world.

Right here on the Lakeland fells we have most of the world’s population of Herdwick sheep. These little sheep graze on the grasses of the fells from where they acquire their distinct flavour.

Also, right here on the Cumbrian shores of the Irish sea we have the salt marsh lamb. Salt marsh lamb gain their unique flavour, colour and texture from grazing on the multitude of wild herbs and grasses that are only found on the salt marshes of our estuaries that are regularly washed by the sea. These marshes have never been fertilised or ploughed. Salt marsh lamb is becoming very popular here in Britain, in Europe the salt marsh lamb is and has been recognised as a delicacy for some time. In the Northern regions of France, it is known as “Pré-Salé”.

So, a vast range of breeds and cuts of lamb for roasting or barbecuing is available.

VENISON

We can provide (depending on the season) wild venison: this can either be Red, Fallow or Roe deer from the heart of Lakeland.

The taste can vary a lot depending on their diet, but in general it is stronger in flavour than lamb.

Your requirement in strength of flavour can usually be catered for by either selecting Red deer that has been grazing on the fell tops for that really strong flavour, all the way down to the Roe deer that has been grazing on the low-lying pasture land near the sea for the light flavour, sometimes not too much stronger than lamb.

OTHER MEATS

Turkey, chicken and wild boar along with exotic meats such as kangaroo and buffalo are available by request.
